This is a favorite in this house...I don't think I've shared it here, have I? Anyway, it's worth sharing again if I did:
Spaghetti Carbonera:
1/2 c chopped onion
4 eggs
1/4 tsp pepper
1 lb spaghetti noodles
1 lb bacon
1/2 c parmesan cheese
parsley
Cook bacon. Remove from pan and sautee onion (I use a little garlic too). Combine eggs, parsley, parmesan cheese, and pepper. Cook spaghetti according to package directions. Strain, but do not rinse. Mix with egg mixture. Bake at 350 for 10 - 15 minutes. Sprinkle with more parmesan cheese. ENJOY!
PS I have edited this recipe to my liking (it's Cory's grandmother's recipe). The original recipe says to cook 1/4 c white wine with the bacon/onion mixture until evaporated and only calls for three eggs. Also, I'm not a measuring cook, so really use a handful of parmesan cheese, etc. Go ahead and make it your own. And let me know if you like it.
PPS So far of my sisters: Amy - no; Laura - yes.

I use Barilla (sp?) brand multi-grain noodles when I make this- yummy! And I use a whole bag of parmesan cheese- I think it's 1 1/4 cups- :D. This recipe is a fav of both mine and Davin's!!!
Yum! This sounds really good. I'll have to try it when I get some more bacon.
Oh yeah....Good meal!
Yeah-my crew didn't like it but I think I should try it again now that I have more bacon than I know what to do with......
I would like it, though I'd probably try the original recipe with more white wine and less eggs.
Hmm... What if you live with a way too healthy husband who doesn't care for bacon? Oh, well. He'd prolly like it though.
