Wild Rice Recipes?
I cooked extra wild rice today (making cream of wild rice soup for dinner) and looking for other wild rice recipes...wild rice meatballs maybe? Any suggestions?
if you don't get any good suggestions, check on 101cookbooks.com. She will likely have wild rice recipes and I've had good luck with everything I've tried of hers so far. I've only made my curried wild rice soup with it so have no tried and true suggestions.
I usually just make a soup as well with wild rice. I'll link you a post to a yummy sounding recipe on an awesome cooking blog though! http://kalynskitchen.blogspot.com/2005/11/wild-rice-with-sausage.html She also has a recipe for "Brown and Wild Rice Salad with Snow Peas and Peppers" which sounds good too. Good luck and let us know how you used it!
Oh, that's funny that you posted this. Because I was going to post this recipe once because it's so good and it works well for leftover wild rice.
Wild Rice & Sausage 1/2 lb. or 1 1/4 uncooked wild rice 1 pkg Jimmy Dean sage flavored sausage 8 oz package sliced mushrooms 1/2 diced onion (to taste) 2 cloves garlic minced (also to taste) 1-2 TB butter season with salt and pepper
Cook wild rice. Brown Sausage with onion, garlic, and mushrooms. Add rice to meat mixture. Add butter and mix until melted. Season with salt and pepper.
(You never said it had to be low-cal or low fat)
It's fantastic. I actually always thought that it would be good with either almonds or peas mixed in.
I am many people. I am the loving wife to Cory (the captain). I am the proud momma to Cole, Matthew (Matty), and Jack, and now...a daughter, Clara. My kids are my life. I am a Realtor, living the dream of being able to work from home so I can raise my kids. These things are important to me: my faith, my family, my world, my friends. I believe in surrounding myself with good people. I believe in good energy and teaching my kids to love. I believe that we all want the same basic things in life, although we sometimes think the road to them is different.
I love to read, be with my kids, my quiet evenings with the captain, who never tires of me talking his ear off. That I got blessed with such an amazing husband is nothing short of a gift from God.
I am very blessed!

Mindi - yum! Do you serve it as a one-dish meal?
Yup. Or maybe with a salad to actually have some nutrition there.
